Letter to the Editor

Sir: Drs. Feinberg and Holzer have asked for clarificationof the types of cheeses used by large pizza chain outlets. Tothe best of our knowledge, the cheese most commonly used ismozzarella cheese, which, strictly speaking, is an aged cheese.However, it appears to be one of the milder cheeses, and ourprevious analyses have shown relatively low tyramine levels inmozzarella.
